This Strawberry Chia Seed Pudding is one of my personal favorite dessert recipes, reason being that it’s not overly sweet in taste and is extremely healthy too. This less than 5 ingredient recipe can literally be made in less than 5 minutes (excluding the resting time).

Chia Seeds provide insoluble fiber, healthy fats, protein, cell- protecting antioxidants, iron, calcium and a lot of other minerals. They are also a good source of Omega 3 fatty acids, essential for brain health.

Strawberries are loaded with antioxidants, are an excellent source of Vitamin C and have astringent, anti-inflammatory properties. They help in maintaining good eye and skin health. Strawberries are also low in calories with 100 g of strawberries contain just about 32 calories.

Both Chia Seeds and Strawberries have amazing benefits, surely making this dessert a healthy one. I have used low fat milk here; however you can use regular milk too. For a Vegan version of this Chia Seed Pudding, use Coconut milk or Soy milk instead.

We are also adding some sweetener to this pudding, to balance the slight tartness of strawberries. I personally love the flavour and taste of Treacle as a sweetener. Treacle, also known as Molasses, is a by-product obtained from the processing of sugar cane and sugar beet into Table Sugar. It is a good source of calcium, Vitamin B and minerals. If you don’t like the flavour of treacle or if it’s not available, you can also replace it with honey.

Direction:

  • Take 2 cups low fat or any regular milk in a bowl. Add ½ cup chia seeds and treacle to it.

  • Whisk everything well till the seeds are mixed with milk.
  • Now cover it and refrigerate for at least 2 hours till the chia seeds bloom.

  • Meanwhile, wash the strawberries well and chop them roughly.

  • Add them to a mixer jar along with 1 tablespoon treacle and make a fine puree. Keep the puree in the refrigerator to chill.

  • After 2 hours, the chia mixture will be thickened. (See below pic for consistency)
  • Now, take a glass and fill 1/3 part of it with strawberry puree.

  • To the remaining 2/3 part, add in the chia seed mixture.
  • Top it off with some chopped strawberries for garnish and enjoy cold!
