Ragi, also known as Finger Millet, is an underrated super food that provides a lot of health benefits. It is high in protein, calcium, fibre and is also beneficial for diabetes and weight loss. Ragi works wonders for maintaining young and youthful skin.

This Ragi Idli recipe is an instant version of Idli made using Ragi flour. This recipe also requires lesser resting time and is quick to make, thus making it ideal to prepare for breakfasts. Also, having Ragi in your breakfast will keep you full for a longer time due to its low glycemic index. I have used only Ragi flour in this recipe (which has resulted in a darker colour of idlis) but you can also use ragi flour and sooji (rava) in equal quantities to make the idlis more light and fluffy.

This Ragi Idli tastes amazing with hot sambar and coconut/tomato chutney.

  • Take 1 cup ragi flour in a bowl. To it, add ½ cup of curd and¼ cup water.

  • Mix everything well and set it aside for 5 mins.
  • Meanwhile, grease the idli pan with oil to prevent the idlis from sticking to the pan.
  • Now, add grated carrot, salt, chopped green chilli and chopped curry leaves to the ragi mixture. Add water as required and mix everything well. The batter should be of a thick consistency.
  • Lastly, add ¼ teaspoon baking soda, give everything a quick final mix and pour the batter into the idli pans immediately.

  • Place the idli stand in a cooker or steamer filled with water and steam the idlis on high heat for around 15-20 mins.
  • Once the idlis are cooled down a bit, remove them from the pan and serve warm with coconut/tomato chutney, podi chutney or some piping hot sambar.
