Winter is almost here and there’s nothing like relishing into hot butter laden parathas for breakfast, brunch or literally any meal of the day. Parathas can be mix n matched with a wide range of veggies going into it and making them nutritious, wholesome and tasty.

This recipe of Hara Bhara Paratha is a unique amalgamation of green veggies that are available in abundance during winters. As opposed to regular roti/paratha doughs, this recipe calls for a spinach dough stuffed with fenugreek, green peas, potato and spices. You can be creative here and add in any vegetables or paneer/ cheese, etc. to try out various other stuffing combinations.

I have tried re-creating this paratha after tasting a similar one at a restaurant and loved the idea of gorging on healthy green, leafy vegetables through parathas than the typical roti-sabzi style.

Directions:

  • For preparing the cover of parathas, take 4 cups wheat flour in a bowl and add in a cup of spinach puree. I have prepared the puree simply by grinding spinach leaves using enough water to get a thick consistency.
  • Add salt to taste and knead into a smooth dough using water as required.

  • Now for the filling, start with adding garlic cloves, ginger and green chillies into a mortar pestle and crush them well.

  • Heat a tablespoon of oil in a pan. Add mustard, cumin seeds above prepared paste.
  • Saute for a few secs before adding in chopped onion. Saute again till the onions turn translucent.

  • Now add washed and roughly chopped fenugreek leaves into the pan. Fry for 2-3 mins till the leaves wilt.
  • Then add boiled potato pieces and boiled green peas.

  • Mash everything well using a masher and add red chilli powder, turmeric, garam masala, coriander powder, dry mango powder & salt as per taste.
  • Give everything a good mix for 2mins and turn off the flame. Remove the mixture in a plate to let it cool down.

  • Now make small balls out of the prepared dough and roll 2 of them into similar size.
  • Spread the prepared stuffing onto one rolled sheet.

  • Place the other sheet on top, seal the edges well and roll again until you get desired thickness.
  • Place the paratha on a well heated pan and cook from both sides till done. Spread some oil/ghee/butter while cooking.

  • Serve the parathas hot with some butter, curd, pickle or green mint chutney.
