This Chickpea Cutlets recipe is a low carb, low fat recipe. I have skipped the used of potatoes, bread crumbs or any kind of refined flour and also used minimal quantity of oil here to make this a healthy snack option.

Chickpeas, also known as Garbanzo beans or Kabuli Chana/ Chole (in hindi), is a great source of plant-based protein.High in protein and fibre, it helps to keep you full for a longer time and the low glycemic indexhelps control blood sugar levels.

This Chickpea Cutlets are also completely Vegan and Gluten Free making it a diet friendly dish, so do try them out and enjoy with some amazing mint coriander chutney, ketchup or any dip that you like.

  • Soak the chickpeas in enough water for at least 7-8 hours or overnight. Pressure cook the soaked chickpeas along with 1 cup of water for about 4-5 whistles.
  • Remove the chickpeas once the cooker is depressurized and mash them coarsely.
  • Now add 2 tablespoon chickpea flour (besan) to a well heated pan and dry roast it on low-medium heat for 2-3 minutes till you see a golden brown colour. Remove the roasted flour from the pan and keep it aside.
  • Now add 1 teaspoon oil to the same pan. Add cumin seeds, grated ginger+ garlic and chopped green chillies.
  • Saute on low-medium flame for a minute and add chopped onion to it.
  • Once the onion turns soft, add red chilli powder, garam masala and turmeric. Mix everything well for 2 mins.
  • Now add in the mashed chickpeas and fry everything well for next 2-3 minutes on medium heat till the boiled smell of chickpeas is gone. Also, the mixture should be completely dry at this point.
  • Then add 2 tablespoon of roasted chickpea flour (besan), salt. Mix everything well and turn off the heat.
  • Once the mixture is cooled down a bit, add it to a mixer jar and blend till you get a powder like texture.
  • Add chopped coriander and lemon juice to the mixture and mix everything well. At this point, you can add 2-3 tablespoon of water just to help combine the mixture well and form cutlets. Don’t add excess water.
  • Heat 1 teaspoon oil in a pan and add the cutlets for frying. Fry them from one side on low-medium heat until done.
  • Then flip them over, add another 1 teaspoon of oil and fry well from the other side too.

  • Your Diet Friendly Chickpea Cutlets are ready to serve. Enjoy them with some flavourful mint coriander chutney, ketchup or any favorite dip.
