Chana Dal Vada, also famous as Masala Vada in South India, is also a popular street food there. These vadas are prepared with soaked chana dal (split chickpeas) which are coarsely ground and mixed with a few spices and deep fried to get a nice crispy texture.

Dal are an excellent vegetarian source of protein and healthy carbohydrates. Chana dal is rich in Vitamin B, folic acid, magnesium, zinc, phosphorus and antioxidants. Magnesium helps in muscle and nerve function, regulating blood pressure and supports immune system. It is also essential for healthy bone function, just like calcium. Zinc also helps to have a good immune system and metabolism. Phosphorus works with Vitamin B and is needed for the body to make protein and also assists in the formation of ATP (Adenosine Triphosphate), which is the source of energy for use and storage at cellular level.

My version of Chana Dal Vadas are not deep fried but are make in appe/ paniyaram pan, which uses very little oil and thus makes this dish perfectly healthy and tasty too. I have added some rice flour to these Chana Dal Vada to get crispy outer texture, however it is not added/required in the traditionally deep-fried Chana Dal Vadas.

  • Wash 1 cup of chana dal 3-4 times and soak it in sufficient water for 2 hours.
  • Once the dal is soaked, remove excess water and add it to a mixer grinder.

  • Also add 3-4 chillies roughly chopped and coarsely grind the mixture without adding water. Remove it in a bowl.

  • Now take 1 teaspoon each of cumin seeds, coriander seeds and fennel seeds in a mortar pestle and make a coarse powder out of it. You can also powder this in a mixer grinder.

  • Now add the ground powder to the dal mixture. Also add grated ginger, chopped onion and chopped coriander leaves.
  • Add 2 tablespoons of rice flour and salt as required.

  • Mix everything till well combined. Make small round balls (or vadas) from the mixture for frying and keep aside.

  • Heat an appe pan (paniyaram pan) and add a drop of oil into each of the cavity.
  • Place prepared vadas into appe pan, cover and cook from one side for 3-4 mins.
  • When one side is done, turn the vadas and cook further from other side till both sides are cooked well.

  • Remove the Chana Dal Vadas and serve them hot with coconut chutney.
