This Basil Pesto Paneer sandwich is a healthy, high protein sandwich recipe. The sandwich is loaded with grated paneer (cottage cheese) and also paneer cubes that are marinated in pesto sauce. This one’s a perfect breakfast/ snacks option and also a great tiffin option for kids.

I have used my homemade fresh basil pesto in this sandwich.  This pesto is a low fat, vegan and gluten free recipe. Homemade pesto tastes much better than the store bought ones and is made in less time than you think. Click here for checking out my Basil Pesto recipe.

  • Take 150 gms paneer cubes in a bowl and add 1-2 tablespoon of Basil Pesto to the pieces. Mix gently to coat all the pieces well with the pesto.

  • Also grate 100 grams of paneer and cut the tomatoes in thin round slices. Keep aside.

  • Take 4 slices of bread and spread the basil pesto sauce on all the 4 slices.
  • Layer 2 of them with grated paneer.

  • Add the marinated paneer cubes on top of grated paneer.

  • Now place sliced tomatoes on top of them and sprinkle some oregano. Cover the bread with the other 2 slices to form a sandwich. This will give you 2 sandwiches.

  • Heat a non-stick pan and place the sandwiches on it. Toast it well from both the sides on low-medium flame until done.

  • Basil Pesto Paneer Sandwich is ready. Cut them into desired shape and serve with ketchup or any favorite dip.
