Kairicha Panha or Aam Panna is a popular refreshing summer drink in every Maharashtrian household. Aam Panna is one of the many interesting ways in which raw mangoes are used, that are abundantly available during early summers. Raw Mango is known for its properties to kill the intense summer heat & have an overall cooling effect on the body. Besides this, it is a good immunity booster, helps in digestive problems and reduces the risk of blood disorders. Raw Mango is also high on antioxidants, Vitamin C, Vitamin A and amino acids.

This sweet & tangy Aam Panna drink is made by preparing a thick raw mango concentrate using cooked raw mango pulp and sugar/ jaggery. It can be flavoured by simply adding some cardamom powder or even cumin powder, red chilli powder or sometimes mint. This concentrate can be refrigerated for up to a week till further use and can be diluted in water, as and when required to prepare this soothing raw mango drink.

  • To get the raw mango pulp, firstly wash the raw mangoes and add them in a pressure cooker. Add some water at the base of the cooker and place the raw mangoes into another vessel with a lid on.
  • Pressure cook for around 4 whistles and let it depressurize on its own.
  • Remove the mangoes and let them cool.

  • Peel off the outer skin of the cooked raw mangoes and remove the pulp. Discard the seed. Also, scrape off the peels well to ensure all the pulp has been taken out.

  • 3 medium sized raw mangoes will give approx. 1 cup of pulp. Add it to a mixer jar and add 2 cups of jaggery powder. The ratio of pulp: jaggery should be 1:2. So for any excess/ short quantity of the pulp, adjust jaggery accordingly.
  • If using sugar in place of jaggery, use about 1-1.5 cups depending on the sweetness you prefer.

  • Add ½ teaspoon cardamom powder & some salt to taste.
  • Grind everything finely WITHOUT adding water.

  • This concentrate is ready and you can store it in a glass jar in the refrigerator for an extended shelf life.

  • To make the aam panna, take one tablespoon of the concentrate in a glass. You can adjust this quantity depending on how light or strong you want the flavour to be.

  • Now in the glass, add some saffron water. To prepare the saffron water, soak a few saffron strands in water and let it sit for a few mins.

  • Add chilled water into the glass and stir till everything is well mixed.
  • Add a few ice cubes if desired and serve!
