Hey, I’m back with a super comfort food recipe which is the Dahi Bhaat or Curd Rice. ‘Curd Rice’ is an easy, cooling and a comforting dish prepared using cooked rice, curd and a simple tempering. You could use freshly cooked or even a day’s leftover rice to quickly mix it up with a few ingredients to get this best-tasting summer dish.

Benefits of curd, specially during summers include providing stronger immunity, controlling blood pressure, reduce stress and providing essential nutrients like Zinc, Vitamin C, calcium, etc. Curd is also an amazing pro-biotic and a curd rice combination helps improve microbial balance that in turn helps digestion too.

This Curd Rice is a befitting finale to a sumptuous spicy meal or could be enjoyed slightly chilled during summer noons. Here’s how to make this comfort food in under 30 mins.

  • To prepare curd for the curd rice, take 2 cups of fresh curd in a bowl and whisk it well.
  • Add grated ginger and finely chopped green chillies into it.
  • Also add boiled (and cooled) rice, chopped coriander, salt as per taste and give everything a good mix.

  • You can adjust the proportion of curd and rice as to how thick or runny you want the curd rice to be.

  • For the tempering, heat a teaspoon of oil and add mustard, cumin seeds in it.
  • Once they start to splutter, turn the heat to low and add all remaining ingredients like fenugreek seeds, asafoetida, curry leaves and dry red chillies. Mix and turn off the flame in next 10-15 seconds.

  • After the tempering gets slightly warm, pour it over the rice-curd mixture and give everything a final mix.
