This Mushroom Clear Soup is a light, flavourful soup that can be a great accompaniment in cold weathers. This soup has a prominent taste of butter and garlic and has minimal ingredients that give just the right amount of flavour to this soup. I have used white button mushrooms here but you can use any. It is very important to clean the mushrooms well even though we are going to cook them. You can check out my Mushroom Stir Fry recipe where I have mentioned the easiest way to clean mushrooms.

Mushrooms are a low-calorie source of fiber, proteins and antioxidants like Selenium that protect body cells from damage that might lead to chronic diseases. It also helps strengthen the immune system. Mushrooms are fat free and low in sodium thus aiding weight management. Besides this, they are also a good source of Vitamin B and D.

  • Firstly clean the mushrooms well and separate the stalks from the mushrooms.
  • Finely chop the stalks and roughly chop the mushrooms. Keep it aside.

  • Now heat butter in a pan and add chopped garlic and onions into it. Fry till the onions turn soft.

  • Then add chopped mushrooms and the stalks. Add salt and saute on low-medium flame till the mushrooms are cooked well and they shrink in size. It will take about 7-8 mins.

  • Now add 2 cups of water and black pepper powder. Also add chilli flakes, oregano and let the soup simmer on medium flame for 3-4 mins.

  • Lastly add some powdered oats for the soup to thicken. This is completely optional though. You can also add a teaspoon of corn flour instead of powdered oats.
  • Give everything a good mix and cook for 2 more mins.

  • Take out the mushroom soup in a bowl. Add freshly squeezed lemon juice, some chopped coriander stalks for garnish and serve warm!
