Masala Chaas or Spiced Buttermilk, also known as Mattha is one classic Indian summer drink recipe. Typically made with thinned yogurt and a few spices, this drink is perfect to beat that heat. Buttermilk offers several health benefits like reducing acidity, preventing dehydration and aids digestion. It also provides variety of essential vitamins and minerals like Vitamin B, potassium, calcium, etc. Buttermilk also has significance as per Ayurveda, where it is recommended to be taken daily for health benefits.

Traditionally buttermilk is the liquid that is left over after churning whole milk into butter. However, one can also make it instantly by churning curd and adding water to make a thin consistency. I have made this masala chaas or spiced buttermilk using thinned curd and flavoured it with chillies, ginger and coriander. You can also add cumin powder, mint leaves or any other flavour if desired.

  • Take curd in a bowl and whisk to make it lump free.
  • Then add grated ginger, chopped chilli, sugar, coriander and salt. Mix well using a hand churner or blender.
  • Lastly add 3 cups of chilled water and mix everything well.
