This Tomato Soup is a super easy recipe that has minimal ingredients yet it is absolutely delicious and flavourful. Tomato soup is always a preferred choice among various soup flavours, and this recipe is sure to be enjoyed by all age groups alike, especially as a winter dinner meal accompaniment.

My secret of getting the bright red colour to this soup is using fresh fully ripe tomatoes and blanching them in boiling water before making a puree. Also I have used only tomatoes in this recipe and no onions or any other vegetables, so the rich red colour of the soup is not altered. I have also used the quantity of spices minimally to get just the right hint of spiciness and flavour to this soup. This No Oil recipe of Tomato Soup is also Vegan and Gluten Free.

  • Wash the tomatoes thoroughly and give a slight cross at the back side on the tomatoes for easy peeling. Also, slit the green chilli in 2 parts.

  • Heat up half the pan with water and add in tomatoes, ginger, garlic and green chilli. Blanch everything for around 7-8 mins on medium heat till you see the tomato skin peeling off.

  • Now remove everything from water and keep it aside to cool down slightly. Once cooled, remove outer peel of the tomatoes and chop them roughly.

  • Then add the chopped tomatoes, green chilli, ginger and garlic to a mixer jar and blend well to get a smooth puree.
  • Add the puree to a pan. Add in 1 cup of water or as required to adjust the consistency of the soup (you can add the same water that was used for blanching tomatoes).

  • Once the soup starts to boil, add 1 teaspoon rock salt, regular salt as required and let it simmer on low-medium heat for 4-5 mins.

  • Lastly add chopped coriander and turn off the flame.

  • Garnish the Tomato Soup bowl with some crushed black pepper, pumpkin seeds and enjoy while it still hot.
