Bottle gourd, also known as Lauki (Hindi), Doodhi (Marathi) or Calabash is a very easily available, local vegetable having numerous benefits and is one of the lowest calorie vegetables carrying just about 14 calories per 100 grams.
Due to its high water and fiber content, and being rich in numerous nutrients, antioxidants, bottle gourd aids in better digestion and weight loss. It also acts as a natural cleanser resulting in improved skin health. Bottle gourd is said to help in treating sleep disorders and also maintaining a healthy heart.
This Bottle gourd Soup recipe is one of my favorite among a few recipes that I have tried until now. It’s an Oil free, Gluten free soup recipe that’s Vegan too.
You can replace the garlic powder in this soup with 3-4 freshly minced garlic cloves if you don’t have garlic powder or you don’t want to alter the light colour of the soup. However, do not skip garlic here. All the spices used in this Bottle Gourd Soup go very well with each other providing a perfect taste and flavour to the soup.
