Farali Rajgira (Amaranth) Kadhi is a flavourful kadhi (soup) recipe that is usually eaten during fasting.

Rajgira (Amaranth) flour is considered as a super food because of the numerous health benefits that it has, and is also a gluten free, low fat flour. You can pair up this Vrat ki kadhi with Sago (Sabudana) Khichadi, Samai (Varai) Rice or with Upwaas Thalipeeth.

Kadhis generally have some tempering added to it so you can add a tempering of clarified butter (ghee), cumin seeds and green chilli to this kadhi as well, but trust me, it taster equally awesome without the tempering too so you can go ahead and skip it for a low fat version.

  • Whisk yogurt in a bowl and make it completely lump free. Add 2 tablespoon amaranth flour, chopped chilli, cumin seeds and cloves.
  • Also add grated ginger, salt, 1.5 cups of water and again whisk everything well.
  • Add the mixture to a vessel. Turn on the flame and once the mixture heats up, add sugar, keep the flame to low and keep stirring continuously till the kadhi starts to boil.
  • Adjust the consistency of kadhi and add approx. 1 cup of water or as required. Once the kadhi boils for 3-4 mins, turn off the flame, add chopped coriander and serve.
